Recipe Post No.21- Fluttery Butterfly Cupcakes!

Hiya!

All pictures are below the recipe!

First of, thank you so much for all us amazing feedback of my picnic preparation as well as a massive thank you to BeautyBe Blogger who also has been behind other scenes of this collaboration. Her side of our collaboration is coming soon....

As of today, I've decided to bake and post a classic, cute, intricate recipe which I hope you enjoy!

To make these cupcakes,you'll need:
• 125g of butter,sugar and self-raising flour
•1 tsp of baking powder
•2 medium eggs
• 1 tbsp of milk

For the buttercream icing, you'll need:
• 75g of unsalted butter
•175g of  icing sugar
• Food colouring of your choice

Pre-heat the oven to 200°C/180°C fan/ Gas Mark 6 and place paper 18 cases either in two bun tines or a greased baking tray.

Put the flour, baking powder, sugar, butter, eggs and milk into a mixing bowl, beating with a handheld electric whisk for 2minutes or until the mixture is pale and very soft.

Half-fill each paper case with the mixture before wishing them luck and placing them inside the oven for 10-15 minutes until golden brown.

Transfer to a cooling rack andnleave to cool completely.

To create the icing, beat the butter into a bowl preferably with a wooden spoon or hand held electric whisk until light and fluffy.

Gradually, stir in the icing sugar followed by 1 tsp of food colouring ( I had chosen red) and the milk or water. Beat well till light and smooth!

Carefully, slice off the tops of the cupcakes and add a dollop of icing. Then, slice the top of cupcake in half and place them golden brown up in the style of a butterfly. Do this for all the cupcakes.
